Rick and Elizabeth Van Hersh, formerly Elizabeth Terry, are the owners and operators of Van Hersh Cattle Company. Coming from multigenerational farming and ranching families in the Texas Panhandle, Rick and Elizabeth have dedicated their lives to ensuring the next generation of cattle ranchers and farmers in their family. They met through mutual friends and knew pretty quickly they were a perfect match. They married at a brisk, sunrise wedding ceremony in December 2018. Shortly thereafter, Van Hersh Cattle Company was formed to operate their cow/calf business. They operate their Angus cowherd on Rick’s family’s homestead that has been in their family since 1907. It is located West of Plainview, Texas on Running Water Draw. Spring Creek Texas Beef sources all beef from Van Hersh Cattle Company.

Rick is a Plainview, Texas native and grew up helping his granddad, John Norfleet, on his cow/calf and stocker/feeder operation. John ran cattle on the family farm and also ranched in Eastern New Mexico. Working with his granddad, Rick developed his love and appreciation for good cattle and horses. This is also where he met many of the people who have shaped his life and taught him the skills and knowledge to be a successful operator. In addition to working alongside his granddad, Rick shod horses, day worked and lived an all-encompassing cowboy way of life. Rick studied agriculture at Tarleton State University before spending eight years living in Midland, Texas working as a petroleum landman and moved back to Plainview in 2016 to pursue his passion of raising cattle. As a rancher, Rick spends a vast amount of his time horseback and enjoys caring for their cattle and land.

Elizabeth was raised just north of Pampa, Texas and has been surrounded by cattle ranchers, farmers and agriculturists of all walks of life since the day she was born. She spent many weekends working cattle with family and showed livestock as a youth. One of Elizabeth’s favorite places to work cattle was at her family’s ranch northwest of Skellytown, Texas which is located on Spring Creek. This ranch has been in her family since 1901 and it is fondly referred to as “The Creek”. This land has been honored by the Texas Family Land Heritage Program for being continuously operated by the same family. From there, the Spring Creek Texas Beef name was born.

Elizabeth is a Texas Tech graduate with a B.S. in Animal Science and went on to receive her M.B.A from West Texas A&M in Canyon. She is currently a financial controller for a local cotton gin during the day and spends her evenings and weekends helping Rick with their cattle operation.

Over the past three years the Van Hershes have worked diligently to find the right ration for their beef. They have found an all-natural ration they believe produces the most tender and best quality beef available. While most of their feed is currently purchased from third parties, one of their future goals is to have a completely vertically integrated feed ration whereby all feed is grown by them, on their land. Together, Rick and Elizabeth have created Spring Creek Texas Beef as a way to share their heritage of farming and ranching and to give others a delicious, local and healthy protein choice. All of their cattle are harvested and processed at Clint & Sons in White Deer, Texas.
